Baked Sweet Potato Fries

I was never a sweet potato person growing up.  My dad detests them, so we only had them on Thanksgiving.  We make them in a casserole with brown sugar and marshmallows melted on top- and it never really appealed to me.  

Fast forward to a few months ago, and we were given sweet potato fries by accident instead of tater tots while out at dinner.  I was hungry and they're in french fry shape so there's really no arguing with trying them, and I found out how very delicious they are.  

They were on sale at our grocery store, so I figured it couldn't be that much more complicated than baking potato chips.  Turns out it's easy and delicious and it's actually fairly healthy.





On to the Recipe!


So after you wash up those sweet potatoes, cut off the ends and any weird looking parts. Peel if you like (I tried with and without skin- they're both great- so it's just what you prefer).




Cut your tater in half, put the flat side down on your cutting board and slice into fry shapes.



Foil a cookie sheet and spray with olive oil, and drizzle some over the top.
Sprinkle with whatever seasonings you like. I went with coarse salt and garlic pepper.




Bake at 375 for 30-45 minutes depending on how thick your fries are.  
Flip fries after 15 minutes, and then shake/flip them every 10-15 minutes when you check on them.

I like mine nice and crispy, so I bake them until they look good and taste good. 






We ate ours as a side with an open-face burger topped with cheddar cheese, apple butter barbeque sauce, and a fried egg.









We'll get around to writing up a recipe for that someday.

This is the apple butter barbecue sauce we used- it's from an Amish store in the middle of nowhere in Indiana.  It goes great on burgers- we haven't gotten to using is on anything else yet (the summer is still young!).
